Amazon.com Review Update your kitchen with this handsome nine-piece cookware set from Calphalon. The charcoal-gray matte finish of the Commercial Hard-Anodized series not only looks sophisticated but is impressive in performance: it sears meats over medium heat, cooks evenly, and stays stick-resistant without having a nonstick finish that can eventually peel. Moreover, hard-anodized pots and pans are safe to use with metal utensils and under the broiler. Riveted on for strength, the stainless-steel Cool V handles stay cool during stovetop cooking and are oven-safe, as are the lids. Covering all the basics, this set consists of a 2-1/2-quart covered shallow saucepan; 8-, 10-, and 12-inch open skillets; and 3- and 7-quart covered chef's casseroles. The lid on the larger casserole is domed to send moisture and flavors back into the pot for succulent meat dishes. You'll find low to medium heat is the best temperature range for this fast-heating cookware. After use, wash by hand. an amazing bargain January 8, 2009 rcb (Austin, TX United States) This is some of the nicest cookware I've ever used. The good: Perfect, even heating. You can make even delicate egg-based sauces in this without a double-boiler. Lovely fond too; seared meat releases when it's done and leaves behind exquisite brown bits for deglazing. The bad: Must be hand-washed; can't go in the dishwasher. Not non-stick; you have to feel the food as you cook it and get it right. The bottom line: There are two lines of cookware that work this well. Both are beautiful and usable, and it used to be a matter of esthetics to choose between them. Do you want Calphalon black or All-Clad silver? Since the Calphalon Commercial Hard-Anodized went on sale for 80% off, the choice became easy.
everything sticks January 6, 2009 A. Picazo I bought these because I thought it was time I invested in some nice pans. For some reason these pans are the worst things I have ever cooked in. Every thing I make sticks to the pans. I can't make eggs without them sticking to the pans. I can't make anything!
Don't Buy These Pans! Buyer Beware January 4, 2009 Marc E. Sundquist (Milwaukee, WI) I read many of the product reviews and also own other Calphalon pans, these don't measure up and everything, and I mean everything, sticks to these pans. I have other Calphalon pans, all with smooth handles, these have cast iron handles and are a cheap knock-off of the originals. Save yourself the frustration and don't buy these pans! I purchased them for Christmas and I am calling Amazon tomorrow to return.
Factory 2nds, or maybe 3rds? January 3, 2009 upset customer Compared to other pieces from Calphalon hard-anodized line, this set is much lesser quality. The handles are not as smooth as the other pieces I own and purchased separately. I don't claim to be a gourmet cook, but I've been cooking long enough to know the quality of things I paid for. The set quickly became dull and has discoloration on the bottom like I had it for years (it's only been a month). And I did follow care instructions and never put it in dishwasher. Not to mention that I got 8 pc. instead of 9 being advertised. Very disappointed and would not recommend.
OK pans December 28, 2008 Barbara A. Fresso Thought I was getting these awesome pots and pans, but in actuality, they look nice, but they are a pain to keep clean. And the instructions say not to use PAM, so there's no point in trying to cook low fat in these pans. Even when I use oil, things things still stick. Also, you are not supposed to stack them when you store away, so I have to buy a new pot rack, which there is not really any room in my kitchen for. I'm so disappointed with my purchase. I wish I could return them. If I could do it all over again, I would spend the extra money for the non-stick calphalon.
